Processing Principle & Steps

1. Conditioning with Steam

    

   Whole corn kernels are first placed in a steam chest and exposed to high-pressure steam (typically at 100–120°C) for a set period, usually 20–60 minutes. This step softens the corn kernel, gelatinizes the starch (breaks down the rigid starch structure into a more digestible form), and increases the kernel’s moisture content to 18–22%.
    
2. Flaking

    

   The steam-treated corn is then passed through a pair of heavy-duty, smooth steel rollers that compress the kernels into thin, uniform flakes with a thickness of 1–3 mm. The pressure from the rollers further disrupts the cell walls of the corn, enhancing the accessibility of nutrients to digestive enzymes.
    
3. Drying (Optional)

    

   For long-term storage, the flakes may be dried to reduce moisture content to around 10–12%, preventing mold growth and spoilage.
    

Key Characteristics & Advantages

1. High Starch Digestibility

    

   The steam-gelatinized starch is far more easily broken down by amylase (both in animal digestive tracts and industrial processes) compared to raw or dry-rolled corn. This improves energy utilization efficiency, which is critical for livestock growth and milk production in dairy cows.
    
2. Improved Palatability

    

   The flaky texture and mild, toasted flavor make steam-flaked corn more appealing to livestock (e.g., cattle, sheep, poultry) than unprocessed corn, increasing feed intake.
    
3. Reduced Anti-Nutritional Factors

    

   Steam treatment helps reduce the activity of some anti-nutrients in corn (e.g., trypsin inhibitors) that can interfere with protein digestion in animals.
    

Main Applications

1. Livestock Feed (Primary Use)

    

   It is a staple energy ingredient in beef cattle finishing diets, where it supports rapid weight gain. It is also used in dairy cow rations to boost milk yield and in poultry diets to improve feed conversion efficiency.
    
2. Human Food Products

    

   Occasionally, steam-flaked corn is used in breakfast cereals, snack bars, or as a thickening agent in soups and sauces. It can also be ground into a flour alternative for gluten-free baking.
    

Notes

• The processing parameters (steam time, temperature, roller pressure) must be precisely controlled—over-steaming can lead to excessive starch degradation, while under-steaming results in low digestibility.
• Compared to dry-rolled corn, steam-flaked corn has higher production costs but offers greater economic benefits for livestock farming due to improved feed efficiency.
