Standardized Pectin Food Grade Gelling Agent
Genblentex®PTG3210 is a thickener suitable for preparing acidic high-sugar products (with soluble solids >65%, pH=3.2-3.5) such as candies and jams, with or without the addition of fruit pulp.
The product is a milky white or light brown powder, neutral in taste, and odourless.
It forms a gel when acid is added after cooking the sugar, giving the final product a certain elasticity and toughness, and it remains clear and transparent.
