Calcium propionate is a safe and reliable preservative for food and feed approved by WHO and FAO. Like other fats, it can metabolized and absorbed by humans and livestock, and provides essential calcium, an advantage that no other preservative can match. It is considered GRAS.
Molecular mass 86.22, white light-weight scaly crystals, or white granules or powder. Slight special odor, deliquescent in damp air. The monohrate is a colorless monoclinic tabular crystal. Soluble in water, slightly soluble in ethanol. It has a wide range of antibacterial effects on molds,asts, and bacteria, and can be used as a preservative in bread and pastries, where the lower the pH value, the higher the preservative power. Calcium propate is almost non-toxic to humans.
